Short description:
Normally I make such knives based on customer requests. For this knife, however, I immediately had a vision that I had to implement.
The word "Santoku" means "three virtues". Santoku knives are used for cutting meat, fish and vegetables. For me, the Santoku shape is one of the most versatile and my personal favorite blade shape. The blade is 18 cm long and is made of mixed Damascus with an Apex Ultra core, the handle is made of upcycled mahogany wood.

Material:
This Santoku was forged using the San-Mai technique . This means that it consists of three layers, whereby the cutting layer is different from the "cladding", i.e. the outer layers. The cladding here is made of mixed Damascus steel, which creates the characteristic lines of light and dark stripes in the finished knife. The cutting layer is made of Apex Ultra , a specially developed knife steel that achieves exceptional hardness and can therefore be sharpened particularly sharply. This sharpness is also retained for an unusually long time, which increases the lifespan of the knife.
The handle is made of mahogany , obtained from old stair treads, combined with a brass ferrule. Mahogany is a popular precious wood due to its deep color, grain and hardness. Tropical wood does not usually come into my workshop - for moral reasons. However, I make exceptions if the wood has been recycled or rescued, as in this case. The wood for this knife handle comes from old stair treads that were removed when my grandparents' house was remodeled. To keep it from the firewood pile, my grandparents' neighbor and close family friend stored the wood at his place for almost 35 years until I found it there. Now I use it for fine pens, knife handles and more.
